These three ingredient coconut balls are the perfect and healthy reward, like a snack, but much healthier. They are a healthy vegetarian snack, sugar free, carbohydrate free, gluten free and are made in less than 10 minutes!
2 cups of shredded coconut I used homemade.
1 cup of condensed coconut milk
100 grams of dark chocolate to melt
If you use homemade shredded coconut, you can find out how to do it on my blog. Alternatively, use dried unsweetened coconut and start by mixing the coconut with the condensed coconut milk until it is well combined.
Form this mixture into coconut balls and let them cool in the fridge (use my images as a size reference).
Meanwhile, melt the dark chocolate and dip each coconut ball in it. You can use whatever method you prefer. However, I like to use wooden skewers to dip the balls in the chocolate and let them dry on a wire cooling rack. Leave a piece of baking paper underneath to catch any chocolate drips.
Cool once more and enjoy!
