Chocolate Covered Coconut Bars

Ingredients:

  • 3 cups sweetened shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 cups semisweet chocolate chips
  • 2 tablespoons coconut oil (or vegetable oil)

Instructions:

Prepare the Coconut Filling:

  • In a medium bowl, mix the shredded coconut, condensed milk, and vanilla extract until well combined.
  • Using your hands, form the mixture into small rectangular bars. Place the bars on a baking sheet lined with parchment paper.
  • Freeze the bars for at least 30 minutes or until firm.

Prepare the Chocolate Topping:

  • In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each one, until the chocolate is completely melted and smooth.
  • Alternatively, melt the chocolate and coconut oil in a heatproof bowl set over a pan of simmering water (double boiler method), stirring until smooth.

Top the Coconut Bars:

  • Using a fork, dip each frozen coconut bar into the melted chocolate, ensuring it is completely coated. Let any excess chocolate drip off.
  • Place the chocolate-covered bars back on the parchment-lined baking sheet.

Set the Chocolate:

  • Refrigerate the bars for about 20 minutes or until the chocolate is firm.

Serve:

  • Once the chocolate is firm, the bars are ready to be served. Store leftovers in an airtight container in the refrigerator.
