Loaded Potato Soup Recipe

This comforting loaded potato soup is rich in flavors, combining hearty vegetables, creamy broth, and crispy bacon for a perfect meal during chilly days.

INGREDIENTS

  • 6 medium Russet potatoes, cut into bite-size pieces
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 3 stalks celery, diced
  • 6 slices of bacon, cooked and crumbled
  • 8 cups of vegetable broth or chicken broth
  • 1 cup milk
  • ½ cup heavy cream
  • 1 tsp minced parsley
  • Salt and pepper to taste
  • 3 tbsp flour (cornstarch can be substituted)
  • 1 cup finely grated cheese of your choice

INSTRUCTIONS

Prepare the Bacon:

  • In a large soup pot, cook the bacon over medium heat until crispy, about 8-10 minutes. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate. Drain most of the bacon fat, leaving about 1-2 tablespoons in the pot.

Sauté the Vegetables:

  • Return the pot to medium heat. Add the diced onion, celery, and sliced carrots. Sauté until the vegetables begin to soften and the onion becomes translucent, about 2 minutes.
  • Add the diced potatoes and season with salt and pepper. Stir to combine.

Cook the Soup:

  • Pour in the vegetable or chicken broth, ensuring it covers the vegetables. Bring to a low boil, then reduce the heat and simmer for about 10 minutes or until the potatoes start to soften.

Thicken the Soup:

  • In a small bowl, whisk together the flour (or cornstarch) and milk until smooth. Gradually add this mixture to the pot, stirring continuously. Cook for another 5 minutes or until the soup thickens.

Blend and Finish:

  • Remove about ¼ to ½ of the soup and blend until smooth. Slowly reintegrate the blended soup back into the pot, stirring gently.
  • Stir in the heavy cream and add the crumbled bacon, reserving some for garnish.

Serve:

  • Ladle the soup into bowls. Garnish with reserved bacon, minced parsley, and a handful of grated cheese. Serve hot, accompanied by crusty bread if desired.
