Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil (if needed)
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 large potatoes, peeled and chopped
- 2 carrots, chopped
- 2 celery sticks, chopped
- 4 cups chicken broth
- 1 cup milk
- 2 cups shredded cheddar cheese
- 1/4 cup flour
- 1/4 cup butter
- Salt and pepper to taste
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1/2 teaspoon paprika
- Chopped green onions or chives for topping
Instructions
Cook the Beef:
- In a big pot, brown the ground beef. Add a little olive oil if it’s sticking. Drain any extra fat and put the beef aside.
Cook the Veggies:
- In the same pot, cook the onion, carrots, and celery until they start to get soft. Add the garlic and cook for a couple more minutes.
Add Potatoes and Broth:
- Throw in the chopped potatoes, chicken broth, and the seasonings (basil, parsley, paprika, salt, and pepper). Let it all boil, then turn down the heat and simmer until the potatoes are soft.
Make the Cheese Sauce:
- In a small pot, melt the butter and mix in the flour. Cook for a couple of minutes. Slowly add the milk, stirring until it gets thick. Add the cheese and stir until it’s melted and smooth.
Combine Everything:
- Put the cooked beef back in the big pot. Pour the cheese sauce over the soup and mix it all together. Let it simmer for a bit so everything gets nice and tasty.
Serve:
- Spoon the soup into bowls, add some chopped green onions or chives on top, and enjoy with some bread or crackers.
