Shrimp ceviche is a cold and refreshing sauce that is loaded with shrimp, lemon juice and lots of fresh vegetables.
Ingredients
12 ounces of cooked, peeled, deveined, tailless shrimp.
½ cup fresh lime juice
2 Roma tomatoes, diced
1 medium red onion, chopped
2 medium jalapeño peppers, seeded and diced
¼ cup cilantro
2 green onions, diced
¼ teaspoon salt
Instructions
Chop the shrimp. Place them in a medium bowl.
Add the lemon juice. Mix to coat the shrimp with the lime juice. Let stand for 10 minutes.
Add the tomatoes, onion, jalapeños, cilantro, green onions and salt. Cover and cool for 30 minutes to one hour.
Serve with corn tortillas.
