No-Bake Lemon Cheesecake

Lemon Cheesecake – This no-bake cheesecake is a spring and summer screamer. It’s the perfect addition to your Easter or Mother’s Day menu or anytime you need a delicious no-bake dessert.

Ingredients

6 oz. box of lemon jelly
juice of 1/2 lemon
1 ½ cups boiling water
1 ½ cups cold water
1 cup sugar
(2) 8-ounce packages cream cheese
1 teaspoon vanilla
8 ounces Cool Whip
2 cups graham cracker crumbs
1/2 cup melted butter
additional whipped cream and optional lemon wedges/slices for garnish
