Ingredients
Pie Crust

- ▢3 cups sweetened flaked coconut
Pie Filling
- ▢4 egg yolks
- ▢¾ cup granulated sugar divided
- ▢3 tablespoons cornstarch
- ▢¼ teaspoon salt
- ▢¼ cup all-purpose flour
- ▢3 cups half and half divided
- ▢yellow food coloring optional
- ▢1 ½ cup sweetened flaked coconut
- ▢2 bananas firm but ripe, peeled and cut Into ½” thick slices
Topping
- ▢2 cups heavy cream
- ▢3 tablespoons powdered sugar
- ▢1 teaspoon vanilla extract
- ▢½ cup sweetened flaked coconut toasted and cooled
