We don’t eat chocolate in this house. It seems a little strange, since three women live in this house. However, Farmer doesn’t like chocolate. So I don’t make cookies, brownies or chocolate cake to sit on the counter and be tempted to eat it.
Instead, we like ice cream. And the fruit flavors. Cherry desserts. And citrus. I love lemon and lime. Lime ice cream is my all-time favorite. Side note, curse Ben and Jerry’s for taking their Key Lime off the shelves last year and not bringing it back. I was going through withdrawals until I found a Key Lime ice cream that is even better! My hips aren’t very excited but my taste buds are.
As I continued my search in Gooseberry Patch 101 Homestyle Favorites, I was ready to try something different. Dessert sounded fun. And I was excited when I found a recipe for lemon cake. Holy crap, this stuff is amazing. I dare you not to eat more than one piece when you try it!
Even better about this pie, it’s kind of a homemade fact. It uses some elements of the box and some “real” ingredients to make a cake that’s quick and easy. And delicious.
You will need (for the cake):
A box of yellow cake mix.
1 small box of instant lemon pudding mix
¾ cup of oil.
¾ cup of water.
4 beaten eggs.
You will need (for the icing):
2 cups of powdered sugar.
2 tablespoons of melted butter.
2 tablespoons of water.
⅓ cup lemon juice.
Preheat oven to 350° and grease a 9×13 baking pan.
In a bowl beat the eggs and mix in the cake mix, lemon pudding, oil and water until well combined.
Pour the dough into the pan and bake for 30 to 35 minutes.
While the cake is baking, prepare the icing. Mix the powdered sugar, lemon juice and water until well combined.
Once baked, make holes in the cake with a wooden spoon and pour the icing over it.
Simple, easy and delicious! I’m sure you already know how the lemon goes very well with cakes! Try this recipe, you’ll love it!
