Apple Pie Cookies

XI don’t know, but they are very nice and I had a lot of fun making them. I have to tell you that I’m not a cake lover, I’ve never been one… but I really love them!

Ingredients

▢1 ready to use box cake crust 2 crusts in total (You can use the double homemade cake crust if you prefer)
▢1 can fill the apple pie or the filling of the homemade apple pie
▢1 egg white
▢1-2 tablespoons of large sugar crystals Regular sugar will also work (optional)
▢whipped cream to serve optional

Instructions

Preheat the oven to 375 degrees.
Remove the crust from the cake and let it rest for 15 minutes according to the instructions on the box. Place the parchment paper and unroll the cake dough. Using a circle cutter 2.75″, cut circles from one of the crusts (I made 14 and at the end I made a couple more with the leftovers). You can rewind the leftovers to make more circles. Our reader Julie suggested using the can of cake filling as a cutter! What an amazing idea!
Cut strips (approx. 1/4″ or as thick as you like) from the second crust of the cake. (I used a pastry wheel to make them pretty).
Open the can of cake filling and pour it on a cutting board. Cut the apples into small pieces.
Put a heaping tablespoon of pie filling in each circle (you may have some left). Using the cake strips you cut, weave them over each circle to create a lattice. See the tutorial How to create a lattice crust here
Once the framing is complete, use the same cookie cutter to cut out the loose pieces of dough. I used a child’s fork to create the design along the edges. Brush each cookie crust with egg white and sprinkle with sugar.
Place them on a cookie sheet lined with parchment paper and bake for 12 to 16 minutes or until golden brown.

Recipe Notes

My cutter was 2.75″ but if you have one nearby (2.5-3″) it should work fine!
