Brown Sugar and Bacon Baked Beans

I just made these beans. The family loved them! We’ve tried a couple of baked bean recipes lately and this was the favorite one without a doubt.

Ingredients

10 slices of bacon in half
1 yellow onion, finely chopped
1/2 green bell pepper finely chopped
54-ounce can of pork and beans or the equivalent number of smaller cans
4 tablespoons of ketchup
1/4 cup molasses
2/3 cup of brown sugar
1/4 cup cider vinegar
2 teaspoons of dry mustard

Instructions

Cook the bacon halfway through (the way you want it), and let it drain on a paper towel.
Preheat the oven to 325 degrees and place the rack in the medium-low position.
In a deep skillet, heat about 2 tablespoons of bacon fat (or butter) over MED heat. Add the diced onion and green bell pepper and sauté for about 5 minutes, until soft.
Add the rest of the ingredients and stir to combine well. Let the mixture simmer for about a minute.
While the mixture is simmering, grease a 13×9 baking pan.
Pour the beans into the baking pan and put the cooked bacon on top of the beans.
Bake for 2-3 hours, depending on the desired consistency.
Let the beans rest for 5 minutes before serving.
