Brown Sugar and Bacon Baked Beans

Baked beans are a classic summer meal… and very easy to prepare! Don’t look for a can of pre-seasoned beans full of preservatives… Instead, prepare these delicious baked beans with brown sugar and bacon! Your mouth will thank you.

Baked beans are a classic dish, and I love the variety. Depending on your tastes and where you live, your beans can be saltier, sweeter, or smokier. These beans are a great combination of all 3! You get the salty taste of sautéed onions and peppers, the sweetness of brown sugar, and the smokiness of molasses and of course, bacon 🙂
You can cook the bacon however you want, you’re gonna want to use about 10 strips. I chose to cook mine because I don’t have the patience to fry bacon. I also seasoned my bacon with a little pepper, chili powder, dried rosemary, and brown sugar. That’s my signature bacon seasoning, it’s SO addictive!

Ingredients

10 slices of bacon in half
1 yellow onion, finely chopped
1/2 green pepper, finely chopped
54-ounce can of pork and beans or equivalent number of smaller cans
4 tablespoons of ketchup
1/4 cup molasses
2/3 cup of brown sugar
1/4 cup cider vinegar
2 teaspoons of dry mustard

Instructions

Cook the bacon halfway through (the way you want it), and let it drain on a paper towel.
Preheat the oven to 325 degrees and set the rack to the medium-low position.
In a deep skillet, heat about 2 tablespoons of bacon fat (or butter) over MED heat. Add the diced onion and green pepper and sauté for about 5 minutes, until soft.
Add the rest of the ingredients and stir to combine well. Let the mixture simmer for about a minute.
While the mixture is simmering, grease a 13×9 baking pan.
Pour the beans into the baking pan and put the cooked bacon on top of the beans.
Bake for 2-3 hours, depending on the desired consistency.
Let the beans stand for 5 minutes before serving.
