BUTTER AND GARLIC CRUSTED PRIME RIB

Prime Rib is a special cut of meat that is the highlight of many festive meals. Prepared properly, you will be asked to do this year after year, so be prepared😉. For another delicious meat recipe, try my pepper-crusted beef tenderloin.

Ingredients

2 tablespoons of salt
5 pounds of boneless ribeye roast, trimmed
1 cup butter, softened
7 cloves of garlic, minced
2 tablespoons fresh rosemary, finely chopped
2 tablespoons fresh thyme, finely chopped
1 tablespoon of pepper
2 tablespoons of flour
2 cups of meat broth

Instructions

Cover the prime rib with salt and let it rest for 30 minutes.
Preheat oven to 500°F.
In a medium bowl, mix the butter, garlic, rosemary, thyme and pepper.
Spread the butter mixture evenly over the rib roast.
Bake for 25 minutes.
Turn off the oven, but leave the ribeye roast in the oven for 2 hours. Be sure to leave the oven door closed so the heat does not escape. I recommend starting to check the internal temperature after one hour.
Remove the roast from the oven. Transfer it to a carving board, loosely covering it with aluminum foil for about 20 minutes before cutting it, and pour the drip from the pan into a medium saucepan to make the sauce.
Heat the drippings over medium heat. Beat the flour and meat stock until thickened.
Remove from heat and strain the lumps.
Cut the prime rib and serve with the sauce.
