Cabbage Soup is a delicious dinner recipe that will warm your tummy on a cold, crisp autumn day. This unfilled cabbage soup is one of the BEST soup recipes we have ever made and very easy to make!
2 tsp. vegetable oil
1 pound of lean ground meat
salt and pepper
1 medium yellow onion, finely chopped
2 cloves of garlic, minced
4 cups of chopped green cabbage
2 medium carrots cut in quarters and sliced
4 cups low-sodium meat broth
3 8 oz. cans of tomato sauce
1/2 cup uncooked white rice
1 bay leaf
3 tablespoons of light brown sugar
2 tablespoons of fresh chopped parsley.
In a Dutch oven or in a large pot, heat the oil over medium-high heat and add the ground meat.
Season the ground meat with salt and pepper to taste and cook it until it browns.
Add the chopped onion and garlic and cook for another 2-3 minutes, until the onions are tender.
Add the chopped cabbage, carrots, tomato sauce, meat stock, white rice, bay leaf and brown sugar and stir to combine.
Bring the soup to a boil and let it cook for about 25 minutes, until the rice is tender.
Remove the bay leaf and sprinkle with chopped parsley.
