CHEESY POTATO CASSEROLE

Cheesy Potato Casserole is a hot dish made with a mixture of creamy potatoes and cheese, covered and baked with corn flakes for that extra crunch.

Ingredients

Potatoes
32 ounces frozen French fries, thawed
1/4 cup (1/2 stick) of butter
2 cups spicy cheddar cheese, grated
1 1/2 cups of sour cream

Sauce
1/4 cup (1/2 stick) butter, melted
1/2 medium onion, chopped
2 teaspoons garlic, minced
1/4 cup flour
1 teaspoon kosher salt
1/2 teaspoon of pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon of dry mustard
1/2 cup chicken broth, at room temperature
1/2 cup milk, at room temperature

Topping
1/4 cup (1/2 stick) of butter
3 cups of cornflakes

Instructions

Preheat the oven to 350°F. Spray a 9×13-inch baking pan with non-stick spray.

Potatoes
In a large bowl, combine potatoes, butter, grated cheese and sour cream. Mix well and set aside.

Sauce
In a medium skillet over medium heat, melt the butter.
Add onion and cook until translucent (3-5 minutes). Add garlic and cook for one more minute.
Add the flour, salt, pepper, cayenne pepper and dry mustard. Cook another minute.
Slowly add the milk, beating until smooth.
Slowly add the chicken broth, beating until thickened.
Pour the sauce into the potato mixture. Mix well.

Topping
In a large microwave bowl, melt the butter.
Add the cornflakes. Stir to coat.

Assembly
Pour the sauce and potato mixture into the prepared baking dish.
Cover the dish with the butter and the cornflakes.
Bake for 40-50 minutes, or until golden and bubbly.
Remove from oven. Let it rest for a few minutes before serving.
