CHEESY RANCH SCALLOPED POTATOES

Give your scalloped potatoes a ranchero flavor with these scalloped potatoes rancheras with cheese.

Ingredients

2 pounds of red potatoes, sliced
3 tablespoons of butter
3 tablespoons of all-purpose flour
2 cups of buttermilk
2 tablespoons of ranch seasoning
2 cups grated cheddar cheese, divided
1 teaspoon of pepper
1 teaspoon of salt

Instructions

Preheat oven to 375°F.
Cut the potatoes into 1/4 inch thick rounds and lay them flat in a large skillet. (I like to use a mandolin to make the slices as even as possible).
In a saucepan, over medium-low heat, melt the butter and add the flour to make a roux. Beat constantly for 5 minutes.
As the roux darkens, slowly add buttermilk, stirring as you pour.
Add the ranch seasoning, black pepper and salt. Remove from heat.
Add a cup of grated cheese (I like to switch to a spatula instead of a whisk), making sure it melts.
Pour the cheese sauce over the potatoes in the pan.
Cover the frying pan and cook for one hour.
Uncover the potatoes, add the second cup of cheese and bake for 25-30 minutes more, or until the cheese browns.
