Cheesy Scalloped Potatoes

INGREDIENTS

4 cups of thinly sliced potatoes
3 tablespoons of butter
3 tablespoons of flour
1 1/2 cups of milk
1 teaspoon of salt
1 pinch of cayenne pepper
1 cup grated and spicy cheddar cheese
1/2 cup grated cheese, to sprinkle on top
paprika

DIRECTIONS

In a small pan, melt the butter and mix it with the flour. Let it sit for a minute. Add all the cold milk, stirring with a whisk. Season with salt and pepper. Simmer the sauce until it is soft and boiling, stirring occasionally with a whisk. Reduce the fire and add the cheese. Put half of the cut potatoes in a slightly greased quart pot. Pour half of the cheese sauce over the potatoes. Repeat with the second layer of potatoes and the cheese sauce. Sprinkle the remaining cheese on top. Cover it with a little bit of paprika to give it color. Bake uncovered for one hour at 350°F.
