Chicken Philly

I just fed 4 people (including a football playing teen) for less than $20. Tonight’s Dinner is Chicken Philly Stuffed Potatoes made with: baking potatoes, red onion, green pepper, cheese, pre-cooked frozen grilled chicken and sour cream (all from Aldo).
Bake potatoes in oven at 400 degrees for 45 minutes.
While potatoes are baking, chop onion and green pepper. In a pan, add some oil, frozen chicken, onion and pepper with 2 tbsps of water. Season to taste. I used Cajun seasoning, garlic powder, pepper, and paprika. Cook until veggies are soft and chicken is hot all the way through.
Once potatoes are done, cut them open and spoon in chicken mixture, top with cheese and sour cream

Ingredients:

  • 4 large baking potatoes
  • 1 red onion, finely chopped
  • 1 green pepper, finely chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 cups pre-cooked frozen grilled chicken, diced
  • 2 tablespoons cooking oil
  • 2 tablespoons water
  • Cajun seasoning, to taste
  • Garlic powder, to taste
  • Black pepper, to taste
  • Paprika, to taste
  • Sour cream, for serving

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400 degrees Fahrenheit.
  2. Bake Potatoes:
    • Scrub the baking potatoes clean and pat them dry.
    • Place the potatoes directly on the oven rack and bake for 45 minutes or until they are tender when pierced with a fork.
  3. Prepare Chicken Mixture:
    • While the potatoes are baking, chop the red onion and green pepper.
    • In a pan, heat the cooking oil over medium heat.
    • Add the frozen grilled chicken, chopped onion, and green pepper to the pan. Add 2 tablespoons of water to help steam the veggies.
    • Season the mixture with Cajun seasoning, garlic powder, black pepper, and paprika to taste.
    • Cook until the vegetables are soft, and the chicken is heated through.
  4. Assemble the Stuffed Potatoes:
    • Once the potatoes are done, carefully cut them open lengthwise.
    • Fluff the insides with a fork.
    • Spoon the chicken and vegetable mixture generously into each potato.
    • Top each stuffed potato with a generous sprinkle of shredded cheese.
  5. Final Bake:
    • Place the stuffed potatoes back in the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Remove the stuffed potatoes from the oven and let them cool for a few minutes.
    • Serve each potato with a dollop of sour cream on top.
  7. Enjoy:
