Ingredients

  • 2 large eggs
  • 1 cup (240ml) whole milk

  • 1 cup (240ml) boiling water

For the Caramel Filling:

  • 1 cup (200g) granulated sugar
  • 1/4 cup (60ml) water
  • 1/2 cup (120ml) heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Chocolate Ganache:

  • 1 cup (170g) semi-sweet chocolate chips
  • 1/2 cup (120ml) heavy cream

For the Topping:

  • 1/2 cup (60g) chopped pecans or walnuts
  • 1/2 cup (40g) toasted coconut flakes (optional)

Instructions

Make the Chocolate Cake:

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, mix flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • Add eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  • Gently stir in the boiling water; the batter will be quite thin.
  • Pour the batter evenly into the prepared pans.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  • Place the chocolate chips in a heatproof bowl.
  • Heat the cream in a saucepan until it simmers, then pour it over the chocolate chips.
  • Let it sit for 2 minutes, then stir until smooth.
  • Allow the ganache to cool slightly for easier spreading.

Assemble the Cake:

  • Place one layer of cake on a serving plate.
  • Spread the caramel filling evenly over the cake.
  • Add the second layer of cake on top.
  • Pour the ganache over the cake, allowing it to drip down the sides.
  • Sprinkle with chopped nuts and toasted coconut flakes if using.
