Ingredients:
- 3 cups sweetened shredded coconut
- 1 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 2 cups semisweet chocolate chips
- 2 tablespoons coconut oil (or vegetable oil)
Instructions:
Prepare the Coconut Filling:
- In a medium bowl, mix the shredded coconut, condensed milk, and vanilla extract until well combined.
- Using your hands, form the mixture into small rectangular bars. Place the bars on a baking sheet lined with parchment paper.
- Freeze the bars for at least 30 minutes or until firm.
Prepare the Chocolate Topping:
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each one, until the chocolate is completely melted and smooth.
