CHRISTMAS HOT COCOA COOKIES

These hot chocolate cookies will be your new favorite holiday cookie! Everyone loves hot cocoa and when you turn them into a delicious dessert, people love it! The sticky marshmallow top is so delicious and the sprinkles make it festive.

INGREDIENTS

For the cookies:
1/2 C unsalted sweet cream butter
1 1/2 C Nestle semi-sweet chocolate
1 1/2 C of flour
1/4 C of Hershey’s cocoa powder
1 1/2 teaspoons of baking powder
1/4 teaspoon of salt
1 1/4 C brown sugar
3 large = eggs
1 1/2 teaspoons vanilla extract
12 large marshmallows cut in half

For chocolate icing:
2 C of powdered sugar
4 tablespoons unsalted sweet cream butter, melted
1/4 C of Hershey’s cocoa powder
1/4 C hot water
1/2 teaspoon vanilla extract
Sprinkle the Christmas drops.

INSTRUCTIONS

For the cookies:
In a double boiler, melt the butter and chocolate, stirring frequently. Once melted, set them aside to cool
In a medium bowl, beat the flour, cocoa powder, baking powder and salt.
In a stand mixer, beat the sugar, eggs and vanilla at low speed until combined.
Add the cooled chocolate and mix it until they are blended
Gradually add flour ingredients and mix until combined
Put the dough (it will have a texture similar to brownie) in a bowl and cover it with aluminum foil and place it in the refrigerator for 4 hours.
Preheat the oven to 325 degrees and line a cookie sheet with parchment paper.
Using a small ice cream scoop, take some dough in your hands and make a ball
Place the cookies at a distance of 2 inches
Bake the cookies for about 10 minutes
While baking the cookies, cut the marshmallows in half
Once the cookies are baked, place a marshmallow in the center of the cookies and press down slightly
Put the cookies back in the oven for another 2-3 minutes
Place a wire shelf over another sheet of cookies to allow the frosting to drip
Once the cookies are ready to bake, let them cool for a few minutes before transferring them to a wire rack while you make the glaze.

For the icing:
Combine all ingredients in a large bowl and mix until combined
If the glaze is still too thick, add about 3 tablespoons of hot water to dilute it.
Using a spoon, put some icing on the marshmallow of the cookie
Repeat step number 3 on a few more cookies.
Sprinkle some splashes on the cookies…
Repeat the last two steps on the remaining cookies. Remember to put the frosting on only a few cookies at a time because the frosting will dry quickly.
