Coconut Macaroons

Happy Valentine’s Day! Whether you’re single, dating, engaged or married, I hope this day is wonderful! I love this party. Since it is a “love” holiday, I thought it would be fun to tell you how my husband and I met.

Ingredients

5⅓ cups of sweetened coconut
⅔ cup of sugar
6 tablespoons of flour
½ tsp of salt
4 egg whites
1 teaspoon of vanilla
With chocolate, I use a chocolate coating, but with semi-sweet melted chocolate chips it works too.

Instructions

In a large mixing bowl, combine coconut, sugar, flour and salt.
Add the egg whites and vanilla and mix all the ingredients until well incorporated.
Drop dough with the spoonful into a greased cookie sheet.
Bake at 325 degrees F for 20-22 minutes.
When cool, sprinkle (or dip) the melted chocolate (or melted chocolate chips) on top.
