Cream Cheese Strawberry Cookies

Strawberry cream cheese cookies are delicious, soft, chewy cream cheese cookies with fresh strawberries and white chocolate chips. A recipe for strawberry cream cookies is just what you need for the summer ahead!

Ingredients

1 1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon of salt
1/4 cup unsalted butter softened
4 oz of softened cream cheese
3/4 cup of sugar
1 egg
1 teaspoon vanilla extract
3/4 cup fresh strawberries, chopped
2 tablespoons of lemon juice
1-2 tablespoons of flour
5 ounces of chopped white chocolate
sanding sugar

Instructions

Preheat the oven to 350 F and line the pans with parchment paper.
Pour fresh lemon juice over the chopped strawberries, drain after a few minutes.
Whisk in 1 1/4 cup of all-purpose flour, salt and baking powder and set aside.
Beat butter with sugar and cream cheese until light and fluffy.
Add the egg and vanilla and mix well.
Gradually add the flour mixture and mix until well combined.
Add the chopped white chocolate and stir.
Sprinkle the strawberries with 1-2 tablespoons of flour, mix them until all the strawberries are covered with a thin layer of flour and then stir them very gently into the dough.
Drop one tablespoon of dough into the pan leaving a gap of one inch between them.
Place cookies in the refrigerator for 5-10 minutes before baking.
Sprinkle the cookies with sandpaper sugar if you like, but don’t overdo it because they are quite sweet.
Bake for 13-15 minutes (until edges are golden).
Let them cool for a few minutes in the pan and then transfer them to a wire rack to cool completely.
