1 1/2 cups of all-purpose flour
1/2 cup of dark unsweetened cocoa powder
1 teaspoon of cornstarch
3/4 teaspoon baking soda
1/8 teaspoon of salt
1/2 cup unsalted butter softened
3/4 cup packed brown sugar
1 teaspoon vanilla extract
In a medium bowl, whisk together flour, cocoa powder, cornstarch, baking soda and salt; set aside.
In a large bowl, beat butter and brown sugar with an electric mixer until light and fluffy.
Add egg and vanilla extract and mix well.
Add flour mixture and mix until combined. Cover the dough with plastic wrap and refrigerate for 1 hour until firm.
Preheat the oven to 350F. Line cookie sheets with parchment paper or a silicone baking mat.
Put the cookie dough on the prepared cookie sheets to form 16 balls of dough. Roll them up between your hands until the surface is smooth. Place the dough balls on the cookie sheets about 2 inches apart.
Bake the cookies at 350F for 8-9 minutes until ready. Be sure not to over-bake the cookies or they will dry out.
Remove the cookies from the oven and cool them on the cookie sheets for 2 minutes, then transfer them to the wire cooling racks to finish cooling.
