Easy Buckeyes

Ingredients

1½ peanut butter cups
1 cup butter, softened
½ teaspoon vanilla extract
6 cups of confectioner’s sugar
4 cups of semi-sweet chocolate chips or chocolate topping

Instructions

Line a large tray or baking sheet with waxed paper.
In a large bowl, combine the sugar from the confectioners, peanut butter, vanilla extract and butter, stirring until well blended.
Roll peanut butter mixture into 1-inch balls and place them on a baking sheet lined with wax paper.
Press a toothpick into the top of each ball (which will later be used as a handle for dipping) and cool in the freezer until firm, about 30 minutes.
Melt the chocolate chips in the microwave (about 1 minute).
Using the toothpick as a handle, dip each ball of peanut butter into the chocolate.
Leave a small piece of peanut butter on top to make them look like Buckeyes.
Place the chocolate-covered peanut butter balls on waxed paper and remove the toothpick.
Once the peanut butter has softened, you can use a finger to smooth out the hole in the stick.
Refrigerate, until the chocolate is ready. Store in the refrigerator until eaten or given away.
