EASY FRITO PIE RECIPE

You’ll love this easy fried cake recipe for a family dinner in no time! Cook ground beef with onions, season with taco seasoning and enchilada sauce, then pour over Fritos, top with grated cheese and bake until hot and melted.

INGREDIENTS

1 pound of lean ground meat
1 small onion, peeled and diced
1 package of taco seasoning
2/3 cup of water
1 can of enchilada sauce
1 can (15 ounces) pinto beans, drained and rinsed
1 bag (9.25 ounces) of corn fritters, divided
2 cups of grated Mexican cheese mixture, divided
1 green onion, chopped
sour cream for garnish
prepared guacamole to decorate

INSTRUCTIONS

Preheat the oven to 350ºF. Prepare a 9×13-inch glass pan by spraying it with nonstick cooking spray.
Crumble the ground meat into a large pan. Add onions and cook over medium heat, stirring often, until meat is completely browned. Drain off excess fat. Add seasoning mixture and water, simmer and cook for 3-4 minutes, stirring often.
Add enchilada sauce and beans; stir well.
Pour 4 cups of the Fritos into the bottom of the baking dish and sprinkle with 1 cup of cheese. Spread meat mixture evenly over the Fritos. Cover with remaining cheese.
Bake the pan at 350ºF for 18-20 minutes until hot and bubbly. Sprinkle the top of the pan with the remaining Fritos.
Cool slightly before serving. Serve with chopped green onions, sour cream and guacamole.
