3 tablespoons of olive oil
1 cup finely chopped onion
1/3 cup grated carrot
3 cloves of garlic, minced
1/4 cup fresh basil, chopped
1/2 teaspoon dried oregano

28 oz canned whole tomatoes
28 oz canned crushed tomatoes
2 tablespoons of tomato paste
1-2 teaspoons of sugar (optional)
1/2 cup of water

In a large pot, heat the olive oil over medium heat. Add the onion, carrot and garlic. Cook until soft, about 5 minutes.
Add the whole tomatoes (with the juice) and gently spoon them away. Add the rest of the ingredients.
Simmer, uncovered, for 20 minutes or until sauce reaches desired consistency.
Serve over spaghetti or enjoy your favorite recipes. Freeze or refrigerate for storage.
