The butter cookie recipe is delicious and easy to make dessert, snack and the traditional Christmas gift. The classic butter cookie recipe uses only three ingredients: salted butter, powdered sugar and flour. If you add a touch of vanilla extract, you will have the best butter cookies.
1 cup of softened salted butter
¾ cup of powdered sugar
1 teaspoon of vanilla
2 ½ cups of all-purpose flour
Mix soft butter, powdered sugar and vanilla, just to combine.
Gradually add flour and mix to combine. Do not over-mix. The mixture will look crumbly. Knead it only a few times with your hands so that it comes together. Form a disk, wrap it in plastic and let it cool down for 45-60 minutes.
When ready to bake, preheat the oven to 325 F and line the baking sheets with parchment paper.
Roll out dough 1/3 -1/2 inches thick and cut into desired shapes. You can use a pizza cutter or a sharp knife and cut into rectangles. If you want to make “pizza cuts” use a 2″ bowl. I used a 7.5″ bowl to cut a large circle. Then use a smaller bowl (6 inches) and press lightly on the circle to make the edge. Use a knife to make dents in the edge.
Use a wooden skewer to make dots.
Place the cookies on a baking sheet, leaving at least 1 inch of space between them.
Bake at 325 F until edges are lightly browned (18-20 minutes).
I like to put the cookies in the freezer 5 minutes before baking to help them stay in shape during baking, but you can skip this step. If you cool the cookies in the freezer before baking, the baking time will be about 22-25 minutes.
