Farmer Casserole

YOU WILL NEED:

6 cups of diced potatoes.
1 tablespoon extra virgin olive oil.
1 ½ cups shredded reduced-fat Colby or Monterey blend cheese
6 slices Canadian bacon, cubed.
2 slices green onions
24 ounces (2 cans) evaporated fat-free milk.
2 cups egg substitute for blenders
¼ teaspoon salt.
¼ tsp. black pepper.

HOW:

In a nonstick skillet, heat oil over medium heat and cook potatoes until lightly browned.
Place potatoes in the pan. Cover with ham, cheese and green onions.
Mix the egg beaters, evaporated milk, salt and pepper in a large bowl until well combined. Then pour in the potato mixture.
In a preheated oven at 375°, bake for 45 to 55 minutes.
Let stand before cutting into 15 equal portions.
Serve hot.
