Fluffy Mini Pancakes

Ingredients:

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 egg

2 tablespoons melted butter

1/2 teaspoon vanilla extract Cooking spray or additional melted butter for greasing the pan

Instructions:

  1. In a mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. Mix well to ensure even distribution of dry ingredients.
  2. In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. It’s important not to overmix; a few lumps are okay. Overmixing can make the pancakes tough.
  4. Preheat a non-stick skillet or griddle over medium-low heat. If using a regular pan, you may need to add a little cooking spray or melted butter to prevent sticking.
  5. Once the pan is hot, pour small amounts of batter onto the skillet to form mini pancakes. You can use a tablespoon or a cookie scoop for uniform-sized pancakes.
  6. Cook the mini pancakes until you see bubbles forming on the surface and the edges start to look set, usually about 2-3 minutes.
  7. Carefully flip each pancake using a spatula and cook for an additional 1-2 minutes on the other side, or until they are golden brown and cooked through.
  8. Transfer the cooked mini pancakes to a plate and cover them with a clean kitchen towel to keep them warm while you cook the remaining batches.
  9. Repeat the process until you’ve used all the batter, adding more cooking spray or melted butter to the pan as needed.
  10. Serve the fluffy mini pancakes with your favorite toppings such as maple syrup, fresh berries, whipped cream, or chocolate chips.
