Graham Cracker Toffee is an incredibly easy to prepare candy, perfect for appetizers, vacations, parties or gifts. Crunchy graham crackers covered with homemade walnut caramel and mini chocolate chips: no one will believe how simple this delicious recipe is!


2 sleeves of graham crackers
1 1/4 cups of butter (2 1/2 sticks)
1 1/4 cups of brown sugar
2 1/2 cups of chopped nuts
1 teaspoon vanilla extract
3/4 cup semi-sweet chocolate mini chips


Preheat the oven to 350F.
Open the graham crackers and arrange them in a single layer on a large baking sheet that is lined with parchment paper or a silicone baking mat.
In a medium saucepan, melt the butter over medium heat. Add the brown sugar and cook until the mixture begins to bubble. Bring to a boil, stirring constantly, for 2 minutes. Remove from heat and add vanilla extract and chopped nuts.
Carefully pour the hot walnut candy over the graham crackers and use a spatula to spread it gently (it will continue to spread in the oven, so you don’t have to work too hard to spread it around).
Bake at 350F for 10 minutes.
Remove the graham cracker candy from the oven and sprinkle with the mini chocolate chip cookies. Let the toffee cool on the baking sheet for 1 hour, or until it is cool to the touch and firm.
Cut the graham cracker toffee into squares or small bite-sized pieces. Serve immediately or store in an airtight container for up to one week.
