Grinch Brownies are anything but grinchy. They are a rich blend of chocolate and mint that guarantees that the heart of any Grinch will grow at least three sizes.
1 9 x 13 box of brownie mix
26 Oreo Mint Cookies, chopped
2 C white chocolate chips
1/2 C heavy cream
1/4 teaspoon of mint extract
4 drops of green leaf food coloring
red hots candies
Preheat the oven to 350 degrees.
Line a 9×13 baking tray with parchment paper. Set aside.
Prepare the brownie mix according to the instructions on the package.
Cut 16 Oreo cookies into quarters and mix them with the brownie dough.
Cut remaining Oreo cookies into quarters and place in another bowl. Set aside.
Spread dough evenly in the pan.
Bake at 350 degrees for 30-35 minutes.
Check brownies for complete baking.
Once baked, place the pan on a wire rack to allow the brownies to cool.
Put a pan full of water to simmer.
Put a heat bowl on top of the pan with water on low heat.
Pour the white chocolate and heavy cream into the bowl. Stir constantly until it melts. Remove the white chocolate chips and heavy cream mixture from the bowl.
Add the mint extract.
Now add a few drops of green food coloring. Stir well to combine. (You can add more mint extract, up to 1/2 teaspoon).
Quickly pour the ganache over the brownies.
Sprinkle the rest of the chopped Oreos over the ganache. Sprinkle the red candies.
Cool the brownies, allowing the ganache to set for at least one hour.
Cut the brownies into bars.
