Grinch Guacamole – Fun Christmas Appetizer

I am always looking for new Christmas snacks to serve my guests and this year we made a Grinch Guacamole snack! It is sure to make children and adults laugh! The green color of the guacamole works perfectly to mold your face.

Ingredients

4 avocados
15-20 cherry tomatoes cut into cubes depending on size
3 tablespoons of the guacamole spice mix that we use in the Epicure Guacamole Dip Mix
2 green stuffed olives
2 black olives kalamata
Juice of half a lemon

Instructions

Cut all the avocados in half and remove the pits. Then take a spoon and slide it gently between the skin of the avocado to separate it from the meat.
Mash the avocados with a fork or mix them in a food processor. Add the guacamole spices along with the juice of half a lemon to the avocado puree and mix well.
Place the guacamole in the center of the plate and mold it into a Grinch face.
Cut your olives into thin strips lengthwise and make the Grinch’s mouth with them.
Place the two green olives on top for the eyes (make sure the red center is visible).
Put two black olive slices for the Grinch’s eyebrows and a chopped tomato triangle for his nose.
Put the chopped cherry tomatoes in the shape of a saint’s hat and add tortilla chips for the “pom pom” of the hat and the border.
Finish your grinch plate by adding cookies or vegetables around it.

Notes

It is important to use a guacamole spice so as not to change the color of the guacamole mixture. If you add tomatoes and onions to your guacamole mixture or even salsa as I have seen in some recipes, your Grinch will change color.
If you can’t find a package of guacamole spice mix, try making your own with a mixture of sea salt, ground bell pepper, garlic powder, dried red bell pepper, chili flakes, onion powder, ground cumin and paprika.
