Homemade Carrot Bread

Carrot bread is a fast, sweet and delicious bread, filled with carrots, spices and everything good.

Ingredients

▢2 cups of flour
▢1 cup of sugar
▢1 ½ teaspoons baking soda
▢1 ½ teaspoons cinnamon
▢1 teaspoon salt
▢½ teaspoon pumpkin pie spice
▢2 ½ cups of grated carrots
▢3 eggs
▢¾ cup of vegetable oil
▢¼ cup of milk
▢1 teaspoon vanilla
▢¾ cup of chopped nuts

Instructions

Preheat the oven at 350˚F. Line a 9×5 bread pan with parchment paper.
Beat dry ingredients in a medium bowl. Set aside.
Mix carrots, eggs, oil, milk and vanilla in a large bowl.
Add dry ingredients to wet mixture. Fold in the nuts and mix until combined.
Pour into prepared pan and bake for 55-65 minutes or until a toothpick comes out clean.

Recipe Notes

If you don’t have spices for pumpkin pie, use extra cinnamon or even spices for apple pie.
Carrots should be grated using the thick side of a cheese grater. They can be peeled or if you rub them, you can skip the peeling.
Don’t mix the dough too much, just stir it until it combines.
Use parchment paper to line the bottom of the bread pan so it is easy to remove.
Ovens may vary slightly, check the bread at least 10 minutes before you think it will be done.
This bread is easier to slice when it is completely cooled.
