An excellent alternative to potato salad with mayonnaise. The potatoes are buttery and warm, and tossed with a great honey mustard dressing.
Ingredients
▢2 pounds baby potatoes cut in half.
▢2 tablespoons butter, melted
3 tablespoons olive oil
▢2 cloves garlic, minced
▢Salt and pepper
▢½ red onion, thinly sliced
▢1 teaspoon fresh thyme leaves or add 1/2 teaspoon dried thyme to dressing.
Honey mustard dressing:
▢1 ½ tablespoons Dijon mustard.
▢2 teaspoons whole grain mustard.
▢2 tablespoons honey
▢2 tablespoons cider vinegar
▢2 tablespoons olive oil
▢¼ teaspoon each salt and pepper.
