Hungarian Goulash

Instructions

In a large pot, melt the butter and add the onion. Cook until translucent. Add caraway seeds and paprika and mix well.
In a bowl, dredge the stewed beef with flour. Add the beef to the onion mixture and cook for about 2-3 minutes.
Slowly add a cup of beef broth to remove brown chunks from the bottom of the pan. Then add the rest of the broth, the diced tomatoes (potatoes and carrots if used), salt and pepper.
Stir and bring to a boil, cover, and then reduce to a simmer for 1 ½ -2 hours or until tender.
