Lasagna Roll Ups

Lasagna roll ups are a quick and easy twist on a traditional lasagna. Tender lasagna noodles filled with creamy cheese and topped with a meat and mozzarella sauce.

Ingredients

▢1 package of frozen chopped spinach, thawed and dry pressed
▢2 cups of grated mozzarella cheese
▢1 ½ cups ricotta or cottage cheese
▢¾ cup grated Parmesan cheese, divided
▢1 egg
▢9 cooked and drained lasagna noodles
▢1 pound of lean ground meat
▢1 chopped onion
▢1 garlic clove
▢2 cups of pasta sauce

Instructions

Preheat the oven to 350°F.
Brown the ground meat, onion and garlic until no pink remains. Drain and add the pasta sauce. Cook and drain lasagna noodles according to package directions.
In a small bowl, combine egg, spinach, cottage cheese, ½ cup parmesan cheese and 1 cup mozzarella cheese.
Place the cooked lasagna noodles and divide the ricotta cheese mixture over the noodles. Roll up the gelatin roll in the style of the rolls.
Half of the meat sauce in a 9×13 plate. Place the rolls on the plate and cover with the remaining sauce. Cover with aluminum foil and bake for 30 minutes.
Remove the aluminum foil and cover with the remaining cheese. Bake 10 more minutes or until the cheese melts.
