INSTRUCTIONS
In a large bowl, beat the butter, cream cheese, egg and lemon extract with an electric mixer until smooth.
Add the lemon cake mixture and mix until well incorporated.
Cover the cookie dough in the bowl and chill in the refrigerator for 30 minutes.
While dough is cooling, preheat oven to 350F.
Roll dough into 1-inch balls, roll each one in the powdered sugar, then place them on cookie sheets greased with nonstick cooking spray. Leave at least 2 inches of space between each cookie.
Bake cookies at 350F for 12-13 minutes until ready. Cool the cookies on the baking sheets for 2 minutes, then transfer to a wire cooling rack to cool completely. Sprinkle with additional powdered sugar if desired.
