Our pretty little lemon cookies with lemon cream filling are perfect for any occasion. From summer to winter, these cookies are perfect for vacations, picnics or just to brighten someone’s day. Lemon cream sandwich cookies are always a favorite!
Ingredients
For the cookie dough :
1 cup granulated sugar (206g)
finely grated zest of 2 lemons (no white marrow)
3 ounces softened cream cheese (86g)
8 ounces of softened unsalted butter (16 tablespoons or 226g)
1 large egg yolk at room temperature
1 teaspoon of fresh lemon juice
⅛ teaspoon of salt
1 teaspoon vanilla extract
2 ⅔ cups all-purpose flour 337g
For the lemon garnish :
½ cup softened unsalted butter (4 ounces or 113g)
1 ⅔ cups powdered sugar plus more for dusting (190g)
½ teaspoon vanilla extract
the finely grated zest of a lemon
1 tablespoon of fresh lemon juice
