Ingredients

Blondies
2 cups of all-purpose flour
1 teaspoon of baking powder
1/2 teaspoon of salt
1 cup of softened butter
1/4 cup of sugar
1 cup of dark brown sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1/2 teaspoon cinnamon

Apple Stuffing
2 large apples, finely cut
2 tablespoons of brown sugar
1 tablespoon of butter
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon

Maple Enamel
2 tablespoons of butter
1/4 cup pure maple syrup
1/2 cup of powdered sugar
1/4 teaspoon vanilla extract
1/8 teaspoon ground cinnamon

Instructions

Preheat the oven to 350 and line an 11×7 frying pan with aluminum foil (or spray the frying pan with cooking spray).

Apple Stuffing
Over medium-low heat, cook the apple filling mixture for about 3-4 minutes. Remove from heat and allow to cool.

Blondies
Butter cream until light and fluffy, about 1 minute. Add brown sugar and granulated sugar, and mix until well combined.
Add eggs, one at a time, beating well after each addition.
Add salt and vanilla extract. Mix until combined.
In a separate bowl, mix the flour, baking powder and cinnamon. Add to wet ingredients and stir until combined.
At the bottom of the pan, spread half of the blonde dough evenly, using a spatula (or your hands – the dough is very thick, so I prefer to spread it with my hands).
Spread the apple filling all over the layer.
Cover with the rest of the blonde dough and spread it evenly.
Bake for 25-30 minutes, or until the top is golden and a pie tester comes out clean.

Maple glaze
Melt butter, maple syrup, vanilla extract and cinnamon over low heat. Once melted together, remove the heat. Sift the powdered sugar, and beat until it is completely combined. Allow to cool for 8-10 minutes to allow the glaze to thicken.
Allow the bars to cool for about 10 minutes, then pour the icing over the bars and let it rest.
Cut into squares and enjoy!
