Mashed Potato Casserole with Crispy Chicken

This delicious mashed potato casserole is topped with corn, cheddar cheese, Tyson® chicken strips and a splash of brown sauce – easy to make ahead of time and bake later for a quick family dinner!

Ingredients

For Casserole:
5-6 cups of mashed potatoes, my home version is divided into portions for this recipe.
1 cup of corn
1 cup cheddar cheese, freshly grated
8 Chicken Tenders, I prefer my homemade recipe, but it can be used frozen.

Instructions

Preheat the oven to 400 degrees Fahrenheit.
If using frozen chicken, leave it at room temperature for about 5 minutes. If you prefer to cut it first, this allows it to soften.
Spread the potatoes in the bottom of a 9 x 13 pan.
Note: If the mashed potatoes are cold, heat them first.
Cover with corn and cheese.
Carefully cut the chicken strips into the desired size and cover the pot with them.
Bake uncovered for 20 minutes if using the frozen chicken strips and 15 minutes for the homemade ones.
Prepare the sauce in the stove while the casserole finishes baking.
Sprinkle the desired amount of sauce over the pan and serve!
