MEATBALL SOUP

This delicious meatball soup recipe brings together meatballs and pasta with onions, carrots, celery and green beans in a hearty beef broth perfectly seasoned with Italian spices. This quick and easy soup recipe takes less than 40 minutes to prepare, making it a great weeknight meal.

INGREDIENTS

2 tablespoons olive oil
1 medium onion, chopped
2 large carrots, peeled and chopped
3 stalks celery, chopped
1 1/2 cups green beans trimmed and cut into one-inch segments
1 1/2 teaspoons parsley, dried
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
6 cups low-sodium beef broth
1 can (8 ounces) tomato sauce
1 can (14.5 ounces) fire-roasted tomatoes
1 1/4 pounds of fresh or frozen meatballs
3/4 cup mini Farfalle pasta (ditalini, acini de pepe or orzo)
