Ingredients:
1 cup of chopped nuts
2 c of all-purpose flour
1 1/2 c of sugar
2 eggs
1 teaspoon baking soda
1 teaspoon of vanilla
pinch jump
1 20 ounce can of crushed pineapple (not drained) in its own juice, not in syrup
CREAM CHEESE GLAZE
1/2 c of butter or 1 bar
1 – 8 oz cream cheese, softened
1 teaspoon of vanilla
1 1/2 c of confectionery sugar
Directions
Preheat the oven to 350 degrees F.
Combine all cake ingredients in a bowl.
Pour into a greased 9×13 inch loaf and bake at 350 for 35 – 40 minutes (until top is golden).
Frost:
Beat butter, cream cheese and vanilla until creamy.
Gradually mix with powdered sugar.
Beat the cake with the cream cheese while it is still hot.
Sprinkle with chopped nuts if desired.
