3 cups salted peanuts (without skin), divided
2 and 1/2 tablespoons of butter
2 cups of peanut butter chips
14 ounces of sweetened condensed milk
2 cups of miniature marshmallows
kosher salt or sea salt, optional
Place 1 1/2 cups of peanuts on the bottom of an ungreased tray 11″x 7″.
Melt the butter and peanut butter chunks in a large saucepan over low heat. Stir until smooth.
Take it out of the heat. Add the condensed milk and the marshmallows. Continue stirring until smooth and well mixed.
Pour the peanut butter mixture over the peanuts in the pan. Sprinkle the remaining 1 1/2 cups of peanuts over the peanut butter mixture. If more salty bars are desired, sprinkle lightly with salt.
Cover and refrigerate until cold. Then cut into bars. The bars can be served cold or at room temperature.
These can be made into a loaf of bread 9″x 13″. Use another cup of peanuts, divided between the bottom of the pan and the top of the bars. The same amount of filler will work and give you slightly thinner bars.
