Peppermint Dream Dessert

Mint extract, baking chips, cheesecake pudding and Oreo crust make this Mint Dream Dessert a delicious treat that family and friends will love. It’s perfect for the holidays!

Ingredients

1 14.3 oz. package of Oreo cookies – you will need 20 of them and use the entire cookie
4 tablespoons unsalted butter, melted
1 3.4 ounce package of white chocolate or instant cheesecake pudding mix We liked the white chocolate better.
1 1/2 cups of milk
4 ounces cream cheese at room temperature
1/2 cup of confectioner’s sugar
1/2 teaspoon of pure mint extract
red food coloring
One 8-ounce container of split Cool Whip
10 ounce packet of Peppermint Crunch Andean French fries, divided
2 ounces of white chocolate for baking separately

Instructions

In a blender or food processor, finely grind 20 of the Oreo cookies.
In a medium bowl, mix melted butter and finely ground cookies until well moistened.
Press into an ungreased 8″ x 8″ baking dish or line pan with parchment for easy removal and cutting of bars.
Place in freezer while mixing the other layers, for at least half an hour.
Using a grater, grate the white chocolate into a bowl.
Mix the pudding mix packet with the 1 1/2 cups of milk in a small bowl and place in the refrigerator to set.
In a mixing bowl, beat the cream cheese, mint extract and confectioner’s sugar.
Fold in 1 cup of the Cold Beat and mix until well blended.
Add red food coloring, one drop at a time, until desired shade is achieved.
Place pieces of the cream cheese mixture on the Oreo crust and spread it out gently.
Evenly spread half of the grated white chocolate and one cup of the baking shavings over the layer of cream cheese.
Place the pudding pieces on top and with a compensation spatula, spread them out gently until completely covered.
Spread the rest of the cold shake over the pudding.
Refrigerate for at least two hours or freeze for one hour.
Optional, in a plastic bag, separate 8 of the remaining Oreos.
Sprinkle remaining chocolate, mint baking shavings and cookies, if desired, over the top just before serving.

Recipe Notes

I updated the recipe on 12/7/16 with the white chocolate pudding to replace the cheesecake pudding. We enjoy the taste of white chocolate at its best. I also added the red coloring to give it a more festive look.
