Pumpkin Snickerdoodles

INGREDIENTS

1 3/4 of all-purpose flour
1 teaspoon pumpkin pie spice
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 c. (1 stick) of butter, softened
1 c. of granulated sugar
1 large egg
1/3 c. pumpkin puree
1 teaspoon vanilla extract

DIRECTIONS

Preheat the oven to 350°. Line two large baking sheets with parchment paper. In a large bowl, whisk together the flour, pumpkin pie spice, cream of tartar, baking soda and salt.
In another large bowl, combine the butter and sugar and beat until light and fluffy. Add the egg, pumpkin and vanilla and mix until well combined. Gradually add the dry ingredients and mix until well combined.
Roll a spoonful of dough into a ball and then roll it in cinnamon-sugar and place it on a baking tray.
Repeat with the rest of the dough and bake until the top begins to crack and the centers are ready, 12 minutes.
