Ingredients:
• 2 tablespoons butter
• 3 tablespoons chopped fresh parsley
• 1/8 teaspoon pepper
• 1/2 teaspoon salt
• 1/4 cup reduced-sodium chicken broth (Progresso® recommended)
• 1/2 cup dry white wine
• 1/4 cup red chili flakes
• 3 cloves garlic, finely chopped
• 1 1/2 lb medium shrimp, peeled, deveined, and tails removed
• 1 medium onion, finely chopped (1/2 cup)
• 3 teaspoons olive oil
• 1 1/2 cups cherry tomatoes, halved
• 4 cups fresh spinach
• 8 oz whole wheat (multigrain) angel hair pasta
Instructions:
1. Cook the Pasta:
In a 5-quart saucepan, cook the pasta according to the package directions. Drain and return the pasta to the pot. Add the spinach, tomatoes, and 2 teaspoons of olive oil. Cover and keep warm.
2. Prepare the Shrimp:
Meanwhile, in a 12-inch non-stick skillet, heat the remaining teaspoon of olive oil over medium-high heat. Add the chopped onion and cook for one minute, stirring occasionally.
3. Add Shrimp and Garlic:
Add the shrimp, garlic, and chili flakes to the skillet. Cook and stir for 2 minutes until the shrimp begin to turn pink.
4. Add Liquid Ingredients:
Pour in the wine, chicken broth, salt, and pepper. Cook for another 2 minutes or until the shrimp are pink and firm.
5. Finish the Sauce:
Remove the skillet from the heat and stir in the chopped parsley and butter until the butter is melted.
6. Combine and Serve:
Add the shrimp mixture to the pot with the pasta, spinach, and tomatoes. Toss to combine and serve immediately.
