SLOW COOKER GREEN BEANS WITH BACON

These slow-cooking green beans with bacon are one of our favorite side dishes. Full of flavor, this easy green bean recipe requires only a handful of ingredients and a few minutes of work.

Ingredients

8 slices of bacon
2 pounds fresh green beans, rinsed and trimmed
1/2 cup of chopped yellow onion
1 potato cut into cubes
1 1/2 cups chicken broth or stock
salt and pepper to taste

Instructions

Cut the bacon into small pieces and cook over medium heat until the bacon is fully cooked and crisp.
Add the onions and sauté with the bacon until transparent.
Lightly spray a slow cooker with cooking spray and add the green beans. and pepper and stir, making sure the bacon drippings mix well.
Add the bacon and onion mixture and then the diced potatoes.
Add the chicken broth, salt and pepper to taste. Often I don’t even add salt because the bacon already has plenty.
Cover and simmer for 6 to 8 hours or over high heat for 3 to 4 hours or until the beans reach the desired tenderness.
Add salt and pepper to taste. Serve immediately.
