Soft Sugar Cookies

These cookies are very easy and do not require refrigeration. They are slightly crunchy on the outside and chewy in the middle.

INGREDIENTS

1 c. of softened butter
1 1/3 c. of granulated sugar
1 egg
2 1/2 teaspoons vanilla
2 1/2 c. of all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon of salt

INSTRUCTIONS

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or cover it with a non-stick spray.
In a large bowl, spread butter and sugar until light and fluffy for 1 minute. Add the egg and vanilla extract. Beat until combined.
Then add the baking soda, baking powder and salt. Mix until well combined. Gradually add the flour mixture as you add it. Be sure to scrape the side of the bowl from time to time.
If you like, you can roll the dough into 1″ balls and roll them in granulated sugar, placing them about 2″ apart on a prepared baking sheet. The other option is to put spoonfuls of dough on a cookie sheet from 2″ away if you don’t want sugar on them.
Bake at 350 degrees for 10-11 minutes or until set. You don’t want to bake them too long or they won’t be chewy and soggy!
Take them out of the oven and cool them down.
After they cool, use them with my favorite homemade frosting or enjoy the singles.
