Ingredients:
Base:
- One can black beans, drained and rinsed
- One can corn, drained
- One red bell pepper, diced
- One-third red onion, diced
- Half a jalapeño, diced (seeds removed)
- 32g Trader Joe’s Hot and Sweet Jalapeños, chopped
Dressing:
- Juice of two limes
- Splash of water
- Red wine vinegar (start slow and add more to taste)
- One teaspoon SkinnyMixes simple syrup (or homemade with any sweetener)
- One teaspoon taco seasoning
Optional Toppings:
- Guacamole
- Feta cheese
- Trader Joe’s Crunchy Crisps for dipping
Instructions:
Prepare the Base:
In a large bowl, combine the black beans, corn, red bell pepper, red onion, diced jalapeño, and chopped Trader Joe’s Hot and Sweet Jalapeños.
Make the Dressing:
In a small bowl, mix together the lime juice, water, red wine vinegar, simple syrup, and taco seasoning until well combined.
Combine:
Pour the dressing over the black bean and corn mixture. Toss until everything is evenly coated.
Serve:
Add guacamole and feta cheese if desired. Serve with Trader Joe’s Crunchy Crisps for dipping.
