Spicy Black Bean and Corn Salad



  • One can black beans, drained and rinsed
  • One can corn, drained
  • One red bell pepper, diced
  • One-third red onion, diced
  • Half a jalapeño, diced (seeds removed)
  • 32g Trader Joe’s Hot and Sweet Jalapeños, chopped


  • Juice of two limes
  • Splash of water
  • Red wine vinegar (start slow and add more to taste)
  • One teaspoon SkinnyMixes simple syrup (or homemade with any sweetener)
  • One teaspoon taco seasoning

Optional Toppings:

  • Guacamole
  • Feta cheese
  • Trader Joe’s Crunchy Crisps for dipping


Prepare the Base:
In a large bowl, combine the black beans, corn, red bell pepper, red onion, diced jalapeño, and chopped Trader Joe’s Hot and Sweet Jalapeños.

Make the Dressing:
In a small bowl, mix together the lime juice, water, red wine vinegar, simple syrup, and taco seasoning until well combined.

Pour the dressing over the black bean and corn mixture. Toss until everything is evenly coated.

Add guacamole and feta cheese if desired. Serve with Trader Joe’s Crunchy Crisps for dipping.

This recipe makes about five servings, with each serving being one point on a personal Weight Watchers plan (note: zero-point beans, but not zero-point corn). Enjoy your spicy, refreshing salad!
